Pancotto

Pancotto a poor man's recipe as old as time, a tasty, tasty and very easy recipe that you can and should prepare with what you have at home. Nothing is thrown away in the kitchen and as grandmothers say, 'to throw bread away is a sin' so why not try making pancotto instead of grating it. There are so many versions depending on the region, some add tomato, some add cheese, some add tons of garlic, but the base always remains the same... BREAD! And since autumn seems to be coming, let's try preparing pancotto together, it's delicious!

Ingredients
  • Stale bread 800 g
  • Vegetable broth 1 l
  • Extra virgin olive oil q.s.
  • Black pepper q.s.
Directions

Take the stale bread and cut it into pieces. Don't worry if it is very hard because it will soften during cooking.

Put the pieces of stale bread in a pot and cover with the stock.

Turn on the heat, put the lid on and simmer for about 25 minutes until you see that the bread has completely absorbed the stock.

Coarsely crush the bread with a spoon so that it crumbles well, turn and serve the pancotto seasoned with raw extra virgin olive oil and pepper if you like.

You can add grated Parmesan cheese if you like. You can cook the pancotto in water instead of broth. You can add tomato puree, or bacon, flavourings that you like and that you like, diced cheese, parmesan or mushrooms.
